Do you want something simple to make in a flash? I really like to have a salad with my meals. It is a good source of fiber and nutrients. It is a little harder to get the ingredients this time of year, but it is still possible. Remember, try to go organic as much as you can on your ingredients. I don't want you to be a fanatic, but just try and choose if you can.
Lettuce and Cucumber Salad: This will serve two
1 Romaine Lettuce Heart
1 Regular cucumber
2 tablespoons of Extra-Virgin Olive Oil
Sea Salt and ground pepper
1-2 teaspoons of lemon juice (to taste)
May also add a little vinegar to taste
Thinly slice the romaine heart by starting at the tip and working towards the base. Rinse in a colander under cold water. Dry it by patting it with paper towels
Skin the cucumber and slice it to taste. Drizzle the olive oil and the lemon juice over the lettuce. Add salt and pepper to taste.
Mix (toss) all the ingredients together and serve cold. You can add vinegar to taste if so desired.
